New's/ Recipe

First off thanks to those who said hi at the Fresh
Market demo yesterday (2/16/08). It was a fun day,
with lots of sample's of the recipe of the month
"Tuscan Balsamic Chicken & Peppers". Look for me
again on 3/01/08, recipe to be announced later. If
you have nothing planned next week Sunday (02/24/08)
why not join me at the Rafters on 27th, just south of
Rawson ave. We will be having an everything "Irish
Show" We will demo popular foods, specialty beers,
and Irish desserts. I look forward to seeing you
there!
Good winter stew:
Chicken & Dumplings
Ingredients
1 lbs Chicken Breast Skinless/Boneless -- cut into 1 inch cubes
1 lbs Frozen vegetable assortment -- use what you like
1 medium Onion Powder -- diced
24 oz Chicken broth
1 ½ cups Buttermilk biscuit mix
Instructions
1. Combine chicken, vegetables, onions, and chicken broth (reserve 1/2-cup, plus 1 tbl. broth) in slow cooker.
2. Cover. Cook on high 2 hours.
3. Mix biscuit mix with reserved broth until moistened. Drop by tablespoonfuls over hot chicken and vegetables.
4. Cover and cook on high for 10 minutes.
5. Uncover. Cook on high 20 minutes more.
